- 1/3 cup all-purpose flour seasoned
- 1 large egg
- 2 tablespoons milk
- 1 3/4 ounces fresh breadcrumbs
- 1/4 cup parsley chopped
- 2 tablespoons Parmesan finely grated
- 6 1/2 ounces boneless white fish pieces
- mayonnaise to serve
- potato wedges to serve
- salad to serve
Directions

1Preheat oven to 400°F. Line a large baking sheet with parchment paper.

2Place flour on a plate. Whisk the egg and milk together in a small bowl. Combine the breadcrumbs, parsley and Parmesan on another plate.

3Dip each piece of fish in the flour, then the egg mixture, and finally the breadcrumb mixture, pressing firmly. Place on prepared baking sheet and chill until required.

4Bake fish for 15-20 minutes until golden and cooked when tested. Serve with mayonnaise, potato wedges, and salad.
