Herb Roasted Highland Potatoes

- 6 large white potatoes
- 14 cup olive oil
- 12 cup red wine vinegar or 12 cup white vinegar or 12 cup balsamic vinegar
- 2 tablespoons dried basil
- 2 tablespoons dried oregano
Directions

1Peel potatoes and cut into 1 inch cubes.

2Mix together oil and vinegar in a large mixing bowl.

3Place potatoes in the oil/vinegar mixture and transfer to a 3 quart baking dish.

4Spread basil and oregano over the potatoes.

5Bake at 450 degrees for 45 minutes to 1 hour.

6Stir potatoes about every 15-20 minutes as they will begin to stick to the pan.
