Ingredients

  • 4 baking potatoes
  • 1 bell pepper
  • salt
  • black pepper
  • 4 Tbsp. (heaping) chopped green onions
  • 3 to 4 Tbsp. melted butter
  • 1 (heaping) Tbsp. parsley
  • 4 Tbsp. grated Cheddar cheese
  • 4 tsp. Parmesan cheese
  • garlic salt to taste

Directions

    Peel or scrub potatoes.

    Slice each potato diagonally into thin slices down to about 1/2-inch of the bottom.

    Use a knife, laying alongside your potato to stop your cut from going all the way through your potato.

    Put into baking dish; open slices slightly. Drizzle with butter; sprinkle with seasonings.

    Bake at 425° for about 40 minutes.

    Remove.

    Sprinkle with cheeses.

    Bake for 10 minutes or until lightly brown.

    Before serving, put bacon bits and green onions.
