- 1 qt. red or yellow cherry tomatoes
- 1/4 c. olive oil
- 1 clove garlic, minced
- 1/4 tsp. sugar
- 2 Tbsp. red wine vinegar
- freshly ground pepper
- 1/4 c. finely chopped fresh basil leaves
Directions

1Bring large pot of water to boil.

2Drop in tomatoes, cover and remove from heat.

3Let set for 1 minute.

4Gently lift out tomatoes and peel off all skins.

5Drain on paper towels.

6Can be prepared to this point and refrigerated.
