  • 2 (1 2/3 lb.) chickens
  • 2 Tbsp. vegetable oil
  • 1/4 c. lemon juice
  • 2 Tbsp. Worcestershire sauce
  • 1/4 tsp. dried oregano leaves
  • 2 Tbsp. butter
  • 1/4 c. finely chopped onion
  • 1/2 tsp. dried basil leaves
  • 1/4 tsp. dried marjoram leaves
  • 2 large cloves garlic, chopped

Directions

    Cut chicken into pieces and remove skin.

    Heat butter and oil in 13 x 9 x 2-inch pan at 375° in the oven until butter is melted. Stir in remaining ingredients (except chicken).

    Place chicken neatly sides down in pan turning to coat with herb mixture.

    Bake, uncovered, at 375° for 30 minutes.

    Turn chicken and bake until thickest pieces are done, about 30 minutes.
