Herbed Chicken Breasts

Ingredients

  • 1 c. soft bread crumbs
  • 1/2 tsp. thyme leaves, crushed
  • 1/8 tsp. rosemary leaves, crushed
  • 1/8 tsp. black pepper
  • 2 boneless chicken breasts (4 oz. each), skinned
  • 1 egg, lightly beaten
  • 2 Tbsp. salad oil
  • 1/2 tsp. salt
  • 1/2 c. white wine (optional)

Directions

    In a pie pan, mix bread crumbs, salt, thyme, rosemary and black pepper.

    Dip each chicken breast in egg and then coat with bread crumb mixture.

    In a medium skillet, heat oil until hot.

    Saute chicken until lightly browned on each side, about 5 minutes.

    Add wine and bring to a boil; reduce.

    Serves 2.
