- 2 large eggs
- 3/4 c. milk
- 2 Tbsp. butter or margarine, melted
- 3/4 tsp. basil
- 3/4 c. unsifted all-purpose flour
- 1/2 tsp. salt
Directions

1Heat oven to 375°.

2Place cast iron popover pans into oven to heat.

3In a medium bowl, beat eggs until frothy.

4Beat in milk and butter.

5Add flour, basil and salt to egg mixture.

6Beat at low speed until smooth.

7Carefully remove hot popover pan from oven. Grease with vegetable shortening.

8Divide batter into popover cups.
-
9Bake 35 to 40 minutes or until puffed and firm on top. Serve immediately.

10Makes 8 popovers.
