Herbed Popovers

  • 2 large eggs
  • 3/4 c. milk
  • 2 Tbsp. butter or margarine, melted
  • 3/4 tsp. basil
  • 3/4 c. unsifted all-purpose flour
  • 1/2 tsp. salt

    Heat oven to 375°.

    Place cast iron popover pans into oven to heat.

    In a medium bowl, beat eggs until frothy.

    Beat in milk and butter.

    Add flour, basil and salt to egg mixture.

    Beat at low speed until smooth.

    Carefully remove hot popover pan from oven. Grease with vegetable shortening.

    Divide batter into popover cups.

    Bake 35 to 40 minutes or until puffed and firm on top. Serve immediately.

    Makes 8 popovers.
