Herbed Potatoes

  • 4 medium size baking potatoes, cut into 1/4-inch slices (1 1/2 lb.)
  • 2 medium size white onions, cut into 1/4-inch slices (12 oz.)
  • 5 plum tomatoes, sliced (1 lb.)
  • 1/2 tsp. salt
  • 1 tsp. dry thyme
  • 3/4 tsp. rosemary, crushed
  • 1 Tbsp. olive oil
  • 2 Tbsp. parsley

Directions

    Coat large baking dish with cooking spray.

    Layer half each of potatoes, onion and tomatoes in dish; sprinkle with half of salt, thyme and rosemary.

    Repeat layers and drizzle with the olive oil. Cover and bake at 425° for 35 to 40 minutes or tender.

    Sprinkle with parsley.

    (If no fresh parsley, sprinkle with 1 tablespoon dry crushed before baking.)
