- 4 medium size baking potatoes, cut into 1/4-inch slices (1 1/2 lb.)
- 2 medium size white onions, cut into 1/4-inch slices (12 oz.)
- 5 plum tomatoes, sliced (1 lb.)
- 1/2 tsp. salt
- 1 tsp. dry thyme
- 3/4 tsp. rosemary, crushed
- 1 Tbsp. olive oil
- 2 Tbsp. parsley
Directions

1Coat large baking dish with cooking spray.

2Layer half each of potatoes, onion and tomatoes in dish; sprinkle with half of salt, thyme and rosemary.

3Repeat layers and drizzle with the olive oil. Cover and bake at 425° for 35 to 40 minutes or tender.

4Sprinkle with parsley.

5(If no fresh parsley, sprinkle with 1 tablespoon dry crushed before baking.)
