- 1 1/2 c. long grain rice
- 1/2 lb. mushrooms, sliced
- 2 c. chicken broth
- 3/4 c. water
- 2 bay leaves (fresh)
- 2 tsp. fresh thyme, minced
- 3 green onions, sliced
Directions

1Combine first five ingredients in a medium size saucepan. Bring to a boil.

2Cover.

3Reduce heat and simmer 30 to 45 minutes or until liquid is absorbed.

4Remove from heat and discard bay leaves.

5Stir in thyme.

6Top with sliced, green onions.
