- 4 lb. well trimmed beef tenderloin roast
- 2 Tbsp. grated Parmesan cheese
- 1 tsp. Italian seasoning
- 1/2 tsp. cracked black pepper
Directions

1Heat oven to 425°.

2Combine seasoning ingredients; press evenly into roast.

3Place on rack in a shallow pan.

4Roast approximately 45 to 50 minutes for medium rare to medium doneness. Remove roast when meat thermometer registers 140° for medium-rare or 155° for medium.

5Sprinkle with cheese.

6Let stand 15 minutes. Slice and season with salt.

7Makes 8 to 10 servings.
