  • 4 c. broccoli flowerets
  • 1 c. diagonally-cut carrot slices
  • 1/4 c. Parkay margarine
  • 1 c. cherry tomato halves
  • 2 egg whites
  • 1/8 tsp. salt
  • 1/2 c. Kraft Light reduced calorie mayonnaise
  • 1 garlic clove, minced
  • 1/2 tsp. dried basil leaves, crushed
  • 1/4 tsp. dried tarragon leaves, crushed

Directions

    Saute broccoli and carrots in margarine until crisp-tender; stir in tomatoes.

    Place in four 8 ounce baking dishes.

    Beat egg whites and salt until stiff peaks form.

    Fold in combined remaining ingredients.

    Spoon mixture evenly over vegetables. Broil 3 to 4 minutes or until golden brown.
