  • 1 lb. butter, softened
  • 1 1/2 lb. flour (3 c. plain)
  • 6 eggs, separated
  • 2 Tbsp. cinnamon
  • 1 lb. dates, chopped
  • 1 1/4 lb. brown sugar
  • 1/2 tsp. baking soda
  • 1 lb. English walnuts
  • 1 Tbsp. vanilla extract
  • juice of 1 lemon

    Cream butter and sugar.

    Add egg yolks well beaten.

    Sift flour with cinnamon twice, then add to creamed mixture.

    Dissolve baking soda in lemon juice and add to mixture.

    Beat well.

    Fold in stiffly beaten egg whites.

    Stir in walnuts, dates and vanilla. Bake in a wax paper lined tube pan at 250° for 2 1/2 to 3 hours or until baked through.
