Ingredients
- 4 good sized salt herring or 8 halves, remove skins or bones
- 8 potatoes, enough to fill 3-quart saucepan when peeled and quartered
- 1 c. cooked potatoes
- 1 large onion
- 2 c. wheat hearts or quick oatmeal
- 1 tsp. thyme
- 1 tsp. pepper
- 3/4 tsp. baking powder
- flour enough to make stiff dough
- 1/4 c. vinegar
Directions

1Grind potatoes, herring and onions.

2Add wheat hearts or oatmeal, thyme, pepper and baking powder.

3Add flour enough to make stiff dough so balls hold their shape.

4Drop dumplings into boiling water to which vinegar has been added.

5Cook1/2 to 3/4 hour.

6Cubes of salt pork may be put in center of balls.

7Serve with melted bacon fat and fried bacon, or melted butter.
