Herring Dumplings

Ingredients

  • 4 good sized salt herring or 8 halves, remove skins or bones
  • 8 potatoes, enough to fill 3-quart saucepan when peeled and quartered
  • 1 c. cooked potatoes
  • 1 large onion
  • 2 c. wheat hearts or quick oatmeal
  • 1 tsp. thyme
  • 1 tsp. pepper
  • 3/4 tsp. baking powder
  • flour enough to make stiff dough
  • 1/4 c. vinegar

Directions

    Grind potatoes, herring and onions.

    Add wheat hearts or oatmeal, thyme, pepper and baking powder.

    Add flour enough to make stiff dough so balls hold their shape.

    Drop dumplings into boiling water to which vinegar has been added.

    Cook1/2 to 3/4 hour.

    Cubes of salt pork may be put in center of balls.

    Serve with melted bacon fat and fried bacon, or melted butter.
