- 1 cup vegetable oil
- 2 cups sugar
- 3 -4 eggs, well beaten
- 3 cups apples, diced
- 3 cups flour, sifted
- 12 teaspoon salt
- 2 teaspoons cinnamon
- 1 teaspoon baking soda
- 2 teaspoons vanilla extract
- 1 cup pecans, chopped (or more)
- 12 cup dark brown sugar
- 12 cup granulated sugar
- 3 tablespoons flour
- 1 pinch salt
- 1 teaspoon lemon juice
- 12 cup water
- 12 cup butter
- 1 teaspoon vanilla
Directions

1Preheat oven to 325 degrees F.

2Mix all cake ingredients (up to and including the pecans) together in a large bowl.

3Pour the mixture into a greased and floured tube pan.

4Bake for 1 1/2 to 2 hours, or until a thin knife or toothpick inserted into the center comes out clean.

5For the Caramel Sauce: Stir all ingredients (below the pecans) in a saucepan on medium heat.

6Bring to a gentle boil and cook, stirring constantly until thickened, about 5 minutes.

7Serve warm sauce with slices of cake.
