Ingredients

  • 1 cup vegetable oil
  • 2 cups sugar
  • 3 -4 eggs, well beaten
  • 3 cups apples, diced
  • 3 cups flour, sifted
  • 12 teaspoon salt
  • 2 teaspoons cinnamon
  • 1 teaspoon baking soda
  • 2 teaspoons vanilla extract
  • 1 cup pecans, chopped (or more)
  • 12 cup dark brown sugar
  • 12 cup granulated sugar
  • 3 tablespoons flour
  • 1 pinch salt
  • 1 teaspoon lemon juice
  • 12 cup water
  • 12 cup butter
  • 1 teaspoon vanilla

Directions

    Preheat oven to 325 degrees F.

    Mix all cake ingredients (up to and including the pecans) together in a large bowl.

    Pour the mixture into a greased and floured tube pan.

    Bake for 1 1/2 to 2 hours, or until a thin knife or toothpick inserted into the center comes out clean.

    For the Caramel Sauce: Stir all ingredients (below the pecans) in a saucepan on medium heat.

    Bring to a gentle boil and cook, stirring constantly until thickened, about 5 minutes.

    Serve warm sauce with slices of cake.
