Ingredients
- 8 ounce. chorizo (spicy sausage) or possibly use ham (1 1/2 c.), precooked
- 4 lg. potatoes, cooked & diced
- 1 c. broccoli, minced
- 1 sm. onion, minced (1/3 c.)
- 3 tbsp. veg. oil
- 1/8 teaspoon pepper
- 1 c. Cheddar cheese, shredded
- Lowfat sour cream
Directions

1Crumble sausage into 12-inch skillet.

2Cook till meat is browned.

3Drain.

4Add in potatoes, broccoli, onion, oil and pepper.

5Cook over medium heat for 8 to 10 min or possibly till golden brown on bottom, turning occasionally.

6Sprinkle with cheese.

7Cover and cook over medium heat till cheese melts.

8Serve the warm mix topped with lowfat sour cream.
