Ingredients

  • 8 ounce. chorizo (spicy sausage) or possibly use ham (1 1/2 c.), precooked
  • 4 lg. potatoes, cooked & diced
  • 1 c. broccoli, minced
  • 1 sm. onion, minced (1/3 c.)
  • 3 tbsp. veg. oil
  • 1/8 teaspoon pepper
  • 1 c. Cheddar cheese, shredded
  • Lowfat sour cream

Directions

    Crumble sausage into 12-inch skillet.

    Cook till meat is browned.

    Drain.

    Add in potatoes, broccoli, onion, oil and pepper.

    Cook over medium heat for 8 to 10 min or possibly till golden brown on bottom, turning occasionally.

    Sprinkle with cheese.

    Cover and cook over medium heat till cheese melts.

    Serve the warm mix topped with lowfat sour cream.
