- 4 medium potatoes, thinly sliced
- 2 medium red onions, cut into wedges
- 2 medium carrots, cut in strips
- 1/4 c. margarine
- 1 clove garlic, minced
- 1/3 tsp. salt
- 1/4 tsp. pepper
- 2 Tbsp. snipped parsley
Directions

1Cut 6 pieces heavy aluminum foil, 18 x 12-inch size.

2Divide vegetables among foil, placing in center (3 vegetables, potatoes, onions and carrots).

3In small bowl, put margarine, garlic, salt and pepper.

4Brush this mixture over vegetables in each foil pocket, using it all.

5Bring up long sides of foil, leaving space for steam.

6Seal tightly with a double fold.

7Fold short ends to seal.

8Grill packets on uncovered grill directly over medium coals 25 minutes or until vegetables are tender.

9Turn over once. Sprinkle with parsley.

10Serves 6.
