  • 2 sticks margarine
  • 8 oz. cream cheese, softened
  • 1 1/2 c. sugar
  • 1 tsp. vanilla extract
  • 4 eggs
  • 2 1/4 c. sifted plain flour, divided
  • 1 1/2 tsp. baking powder
  • 1 c. red or green maraschino cherries, well drained
  • 1 c. chopped pecans, divided

Directions

    Cream margarine, cheese, sugar and vanilla until light and fluffy.

    Add eggs one at a time, beating well after each.

    Sift 2 cups flour with baking powder and add slowly to creamed mixture. Combine remaining 1/4 cup flour with cherries and 1/2 cup pecans. Fold into batter.

    Sprinkle remaining pecans into bottom of a well greased (no flour) tube pan.

    Pour in batter and bake at 325° for 1 hour or until done.

    Cool in pan 5 minutes, then remove to finish cooling.
