  • 1/2 c. butter, softened
  • 3/4 c. packed brown sugar
  • 1 egg
  • 1 1/4 c. all-purpose flour
  • 1 tsp. vanilla
  • 1/2 tsp. cinnamon
  • pinch of salt
  • 1 c. (8 oz.) diced candied pineapple
  • 1 c. (8 oz.) red and green candied cherries
  • 8 oz. chopped dates
  • 1 c. semi-sweet chocolate chips
  • 1/2 c. whole hazelnuts
  • 1/2 c. pecan halves
  • 1/2 c. chopped walnuts

    Preheat oven to 325°.

    Lightly grease cookie sheets or line with parchment paper.

    Cream butter and sugar in large bowl.

    Beat in egg until light.

    Mix in flour, vanilla, baking soda, cinnamon and salt.

    Stir in fruit, nuts and chips.

    Drop dough by rounded teaspoonfuls 2-inches apart onto prepared cookie sheets.

    Bake 15 to 20 minutes or until firm and lightly brown around edges.

    Remove to wire racks to cool.
