- 3 lb. potatoes, peeled and cooked
- 1/4 c. butter (room temperature)
- 1/2 c. sour cream (room temperature)
- 2 eggs, slightly beaten
- 1/4 c. finely chopped onions (optional)
- 8 oz. cream cheese (room temperature)
- 1/2 c. milk (room temperature)
- salt and pepper to taste
Directions

1Mash potatoes until there are no lumps.

2Add cream cheese and butter; beat well.

3Add sour cream, eggs, milk, salt and pepper; beat until fluffy.

4Place in a 9-inch casserole dish.

5Cover and refrigerate overnight.

6Preheat oven to 350°.

7Place potatoes in oven, uncovered, until lightly browned, about 45 minutes.
