Holiday Mashed Potatoes

Ingredients
- 3 lb. potatoes
- 1 (8 oz.) pkg. cream cheese, at room temperature
- 1/4 c. butter or margarine
- 1/2 c. sour cream
- 1/2 c. milk
- 2 eggs, lightly beaten
- 1 tsp. salt
- 1/2 c. finely chopped onion (if desired)
- dash of pepper
Directions

1Peel and cook potatoes.

2Mash hot potatoes in large bowl. When all lumps are removed, add cream cheese in small pieces; add butter.

3Beat well until completely mixed.

4Mix in sour cream. Add eggs and onion to milk, then add to potato mixture along with salt and pepper.

5Beat well until light and fluffy.

6Place in greased 9-inch round casserole and refrigerate several hours or overnight.

7Bake at 350° for 45 minutes or until lightly browned on top.

8Serves 8 to 10.
