Holiday Rice Dressing

Ingredients

  • 1 lb. ground pork
  • 1 lb. ground beef
  • 2 large onions
  • 1 bell pepper
  • 3 ribs celery
  • 3 pods garlic
  • 1 handful parsley
  • 5 c. cooked rice
  • 1 can mushrooms, chopped (save juice)
  • 1 c. pecans, chopped
  • 1 bunch green onions, chopped
  • salt and red pepper to taste

Directions

    Cook pork for 10 minutes; stir often.

    Add ground beef.

    Cook 15 minutes.

    Add onions, garlic, bell pepper and celery.

    Stir well.

    Cover tightly and cook slow for 40 minutes, stirring often. Add salt, pepper and mushroom water.

    Cook 5 minutes more.

    Add cooked rice, mushrooms and pecans.

    Stir well.

    Cover tightly and cook very low until heated thoroughly.

    Add parsley and green onions just before serving.
