- turkey carcass
- 2 stalks celery, chopped (about 3 c.)
- 1 large onion
- 1/2 medium head cabbage
- leftover turkey broth
- 1 bag frozen mixed vegetables
- 1/4 c. raw rice
- 1 chicken bouillon cube
- leftover turkey, chopped
Directions

1Cook turkey carcass, skin and etc. and skim the fat off the broth.

2Place in large kettle and add all the vegetables and rice. Simmer until vegetables are cooked and flavors blended.

3You can add additional bouillon and salt and pepper to taste.

4A very good way to use up leftover turkey and very good at the holiday season.
