Hollandaise Pickles

Ingredients

  • 18 or 20 large pickles
  • 1/2 c. salt
  • 1 qt. sliced onions
  • 3 c. sugar
  • 1 1/2 tsp. turmeric
  • 1 tsp. celery seed or celery salt
  • 2 heaping Tbsp. flour
  • 1 pt. vinegar

Directions

    Peel and chunk the pickles, measuring 4 quarts.

    Soak for 3 hours in salt and ice water or cubes to cover, then drain.

    Add onions and put in large kettle to boil; mix well.

    Mix together remaining ingredients and pour this over pickles.

    Boil good for 10 minutes.

    After it has started a good boil, stir so it doesn't scorch and can while hot.

    Makes about 7 pints.
