- 1 c. flour
- 1 3/4 tsp. baking powder
- 4 tsp. sugar
- 1/2 tsp. salt
- 1 small egg, beaten
- 2/3 to 3/4 c. milk
- 2 Tbsp. oil or melted shortening
Directions

1Sift the flour with the baking powder, sugar and salt together into a mixing bowl.

2Mix the egg, milk and oil/shortening together. Heat skillet on medium heat.

3Add egg mixture to flour mixture. Stir quickly until the dry ingredients are moistened.

4Don't overmix.

5Mixture should be lumpy.

6Test skillet by sprinkling a few drops of cold water on it.

7If the drops dance about and evaporate the skillet is ready.

8Pour batter onto hot skillet, making each cake 3 or 4 inches across.

9Cook until the top is full of little air bubbles and the underside is golden brown.

10Turn over before bubbles break.

11Brown the other side.

12Turn cake only one time.

13Serve with butter, syrup, jelly or honey.
