Homemade Mixed Fruit Bread

  • 1/2 pounds, 2-5/8 ounces, weight Flour, All Purpose
  • 1/2 ounces, weight Sugar
  • 1/4 ounces, weight Yeast, Active Dry
  • 1/4 ounces, weight Salt
  • 11 tablespoons, 2-1/2 teaspoons, 1/8 pinches Water
  • 1/2 ounces, weight Butter
  • 1 ounces, weight Candied Mixed Fruit

Directions

    In mixing bowl combine flour, sugar, yeast, and salt. Mix on low speed for one minute.

    Add water and mix on low speed for one minute.

    Then add butter and knead until smooth and elastic, about 10-15 minutes at medium speed.

    Cover dough with towel and let it rise in a warm place until volume doubles in size.

    Punch the dough down and roll out the dough to from a large rectangle 12x8 inch. Sprinkle the candied mixed fruit over the entire rectangle.

    Roll up tightly, place it in a greased loaf pan, allow to rise for one hour.

    Then bake at 200C degrees for 35 minutes.
