- 2 whole Matzo Crackers
- 2 ounces, weight Dark Chocolate
- 1/4 cups Crunchy Peanut Butter
Directions

1Snap the matzo crackers into strips. Stack up three pieces of cracker that look about even in size.

2Melt the chocolate over a double boiler, or in the microwave (melt for 30 seconds at a time, stirring in between each additional heating to make sure the chocolate doesn't scorch).

3Microwave the crunchy peanut butter for 30 seconds to make it spreadable.

4Using a butter knife, spread the peanut butter between the cracker layers and sandwich them together.

5Top off each cookie with a layer of chocolate.

6Refrigerate until just set. Serve at room temperature.
