  • 3 small tomatoes, seeded and coarsely chopped (1 1/3 cups)
  • 1 small onion, chopped (1/3 cup)
  • 1 -2 fresh jalapeno pepper, seeded and finely chopped
  • 2 tablespoons lime juice
  • 1 -2 tablespoon snipped fresh cilantro
  • 14 teaspoon salt

Directions

    Combine tomato, onion, jalapeno, lime juice, cilantro, and salt in food processor.

    Cover and pulse with several on/off turns until mixture is evenly chopped.

    Season to taste with additional salt, if needed.

    Store in covered container in refrigerator up to 3 days.
