- 1/2 hog head, cooked tender
- black pepper, red pepper, salt and sage (if you like)
Directions

1Mix all ingredients (hog head should be taken off the bone and cut or mashed well).

2Put into cheesecloth and mash grease out. Tie up and hang up overnight to drip.

3Take out of cloth, slice thin and store in refrigerator.
