Hominy Corn Casserole

  • 1 can hominy corn (yellow)
  • 1 can cream-style corn (yellow)
  • 3 stacks Ritz crackers
  • 3/4 stick margarine
  • pepper and salt to taste

Directions

    Drain hominy corn and add to cream-style corn.

    Put in 1/2 of the margarine and cook in pan for about 15 minutes.

    Add pepper and salt.

    Melt the other 1/2 of margarine and add crushed crackers.
  5. 5
    Layer crackers on top of corn and hominy mixture.

    Put in 350° oven and cook until crackers are brown.

    (You may add 1/2 cup grated Cheddar cheese to top of casserole before putting on crushed crackers.)
