Ingredients

  • 1 large cored, pared and finely chopped apple
  • 1 2/3 c. flour, sifted
  • 2 tsp. baking powder
  • 1/4 tsp. salt
  • 1 Tbsp. honey
  • 1/4 c. sugar
  • 1 beaten egg
  • 2/3 c. milk
  • 1/4 c. oil
  • 1 tsp. cinnamon
  • 6 Tbsp. confectioners sugar

Directions

    In a bowl, combine flour, baking powder, cinnamon, salt and sugar.

    In another bowl, combine honey, egg, milk and oil.

    Add egg mixture to flour mixture.

    Blend in apple.

    Grease 2 muffin tins liberally.

    Pour in lumpy batter to fill 2/3 of each cup. Bake at 375° for 20 to 25 minutes.

    Remove tins to a rack; let stand for 5 minutes.

    Use a greased knife to cut around each cup. Tap to remove muffins.

    Sprinkle with confectioners sugar.
