Ingredients

  • 4 cup cold water
  • 3/4 cup honey
  • 4 strips of lemon zest
  • 1/2 cup coarse salt (sea or kosher)
  • 10 whole cloves
  • 10 peppercorns
  • 2 bay leaves
  • 10 allspice berries

Directions

    Combine all the ingredients in a bowl and whisk until the salt and honey are dissolved.

    Use immediately.

    *This cure was designed for fish, but can also be used for turkey, chicken, or pork.

    Cover and marinate small pieces of fish or pork for 1 to 2 hours, medium pieces of fish or pork for 2 to 3 hours, and large pieces of fish or pork overnight in the refrigerator.

    Chicken breasts or turkey breasts need 2 to 4 hours, and a whole bird needs to be marinated overnight.
