Honey-Ginger-Bourbon Balls

- 1 c. gingersnap cookie crumbs
- 1 1/2 c. powdered sugar, divided
- 1 c. finely chopped pecans or walnuts
- 1 (1 oz.) sq. unsweetened chocolate, chopped
- 1 1/2 Tbsp. honey
- 1/4 c. bourbon
Directions

1Combine crumbs, 1 cup sugar and nuts in a large bowl.

2Combine chocolate and honey in small bowl over hot water.

3Stir until chocolate is melted.

4Blend in bourbon.

5Stir bourbon mixture into crumb mixture until well blended.

6Shape into 1-inch balls. Sprinkle remaining powdered sugar over balls.

7Refrigerate until firm.

8Makes about 4 dozen balls.
