  • 1 lb cooked chicken breast chopped into bite size pieces
  • 2 carrots, cut into matchsticks
  • 1 can bamboo shoots, cut in half lengthwise
  • 1/2 lb pea pods, cut in half
  • 1/2 cup peanuts
  • 3 Tbs. soy sauce
  • 2 tsp. sesame oil
  • 3 Tsp. hoisin sauce
  • 2 Tsp. honey
  • 1 clove garlic, minced
  • 1 tsp. grated ginger
  • 1 tsp. crushed red pepper flakes
  • 2 Tbs. canola oil

Directions

    Heat oil in the wok. Add the chopped garlic and ginger.

    Stir-fry the carrots and peapods for a few minutes.

    Add the bamboo shoots and stir.

    Add the peanuts and chicken. Stir.

    Mix together the soy sauce, sesame oil, hoisin sauce, honey, and red pepper flakes. Add to the stir-fry and mix together.
