- 1 1/4 cups blanched almond flour
- 1 tablespoon coconut flour
- 1/4 teaspoon sea salt
- 1 teaspoon baking soda
- 2 large eggs
- 1/3 cup honey
- 3/4 cup walnuts, coarsely chopped
Directions

1Preheat the oven to 350F.

2Line 8 muffin cups with paper liners.

3In a large bowl, combine the almond flour, coconut flour, salt, and baking soda.

4In a medium bowl, whisk together the eggs and honey.

5Blend the wet ingredients into the almond flour mixture with a handheld mixer until thoroughly combined, then stir in the walnuts.

6Scoop 1/4 cup of batter into each prepared muffin cup.

7Bake for 18 to 22 minutes, until a toothpick inserted into the center of a cupcake comes out with just a few moist crumbs attached.

8Let the cupcakes cool in the pan for 1 hour, then frost and serve.
