Honey Yeast Rolls

- 1 pkg. active dry yeast
- 1 c. milk
- 1/4 c. butter
- 1/3 c. honey
- 1 tsp. salt
- 2 eggs, well beaten
- 2 1/2 c. whole wheat flour
- 2 1/2 c. unbleached white flour
Directions

1Dissolve honey in 1/4 cup warm water.

2Scald milk and add butter, honey and salt, let butter melt.

3Cool milk mixture to lukewarm.

4Add eggs and yeast, then flours.

5Mix well.

6Knead until satin smooth.

7Place in buttered bowl; cover and let rise two hours, or until doubled in bulk. Punch down and form into round balls about the size of a golf ball.

8Place separately on buttered cookie sheet or close together in buttered round pan. Cover and let rise again about 30 minutes.

9Bake in preheated 350° oven 15 to 20 minutes or until browned.

10Makes about 2 dozen. These freeze well.
