- 2 medium smoked ham hocks
- 8 c. water
- 2 medium onions, chopped
- 1 stalk celery, diced
- 1 1/2 tsp. salt
- 1/2 tsp. pepper
- 2 c. dried black-eyed peas, rinsed
- 1 1/2 c. regular rice

2ham hocks in 5 quart saucepot.

3Add 8 cups water or enough to cover hocks.

4Cover; bring to a boil.

5Reduce to low heat;

6simmer 1 1/2 hours. Remove bones, leaving meat in saucepot.

12Simmer slowly about 45 minutes or until peas are tender and liquid
