- 2 Tbsp. olive oil
- 1/2 c. chopped onion
- 1/2 c. chopped celery
- 1 clove garlic, minced
- 2 cans (15 oz. each) black-eyed peas
- 8 oz. kielbasa, thinly sliced
- 1 c. uncooked converted rice
- 1/4 tsp. crushed red pepper
- 1 can (14 oz.) chicken broth
Directions

1In a large skillet, saute onion, celery and garlic in hot olive oil until onion is soft.

2Stir in remaining ingredients. Heat to a boil; reduce heat and cover tightly.

3Simmer 30 to 40 minutes or until liquid is absorbed.

4Makes about 6 servings.
