- 3 to 4 strips streak-of-lean or 3 strips bacon
- 2 c. cooked or 16 oz. can black-eyed peas, drained
- 1 c. canned tomatoes
- 1 c. cooked rice
- 1 medium onion, diced
- 1/4 c. diced green pepper (optional)
- salt and pepper to taste
Directions

1Fry out meat; save drippings.

2Crumble meat and set aside. Pour fat into casserole dish.

3Add peas, tomatoes, rice, onion, green pepper, salt and pepper; mix.

4Bake at 350° for 35 to 45 minutes.

5Crumble reserved meat over top and serve.

6Yield: 8 to 10 servings.
