- 2/3 c. chopped onion
- 1 minced clove garlic
- 1 Tbsp. oil
- 4 c. water
- 2 (10 3/4 oz.) cans chicken broth
- 16 oz. pkg. frozen black-eyed peas
- 1/2 lb. cooked ham, cut into cubes
- 1/4 tsp. red pepper
- 1 bay leaf
- 3 c. cooked rice
Directions

1Saute celery, onion and garlic in oil, in large Dutch oven, until tender.

2Add water and remaining ingredients except rice. Simmer for 40 minutes, until peas are tender.

3Remove bay leaf and serve over rice.
