- 1/4 c. plus 2 Tbsp. chopped onion
- 1/4 c. white vinegar
- 1 1/4 c. dried black-eyed peas
- 5 1/2 c. water
- 1/2 tsp. salt
- 1 Tbsp. olive oil
- 1 1/3 c. chopped onion
- 3 cloves garlic, minced
- 1 c. long grain rice, uncooked
- 1 tsp. dried whole oregano
- 1/4 tsp. hot sauce
Directions

1Combine 1/4 cup plus 2 tablespoons chopped onion and white vinegar.

2Let stand 30 minutes; drain and set aside.

3Sort and wash dried black-eyed peas and place in a large Dutch oven.

4Add 5 1/2 cups water and salt; bring to a boil.

5Cover, reduce heat, and simmer for 35 minutes.

6Heat oil in a small skillet over medium heat.

7Add 1 1/3 cups onion and garlic; saute 5 minutes or until tender.

8Remove from heat and add to peas.
