Ingredients

  • 6 slices bacon
  • 1 c. celery
  • 2/3 c. chopped onion
  • 3 c. water
  • 1 (15 oz.) can black-eyed peas
  • 1/4 lb. cooked ham
  • 1 can Campbell's beef broth, undiluted
  • 1 tsp. red pepper
  • 1 c. quick rice

Directions

    Cook bacon until crisp, but onions and celery in bacon drippings.

    Saute until tender.

    Put all ingredients in peas except rice.

    Bring to boil and let simmer for 10 minutes.

    Then put in rice.
