  • 3 tablespoons butter
  • 1 teaspoon finely chopped onion
  • 3 tablespoons flour
  • 1 cup hot milk
  • 14 cup parmesan cheese
  • 1 teaspoon chopped parsley
  • 12 teaspoon salt
  • 12 teaspoon fresh ground black pepper
  • 14 teaspoon nutmeg
  • 1 egg yolk
  • 1 cooked turkey breast
  • 4 slices cooked thick bacon
  • 1 tomatoes
  • 2 slices Texas toast thick bread

    For the sauce.

    Melt butter in a saucepan over medium-low heat; add chopped onion.

    Cook over low heat until onion has softened.

    Stir in flour and cook, stirring, until smooth.

    Gradually add milk, stirring constantly.

    Add remaining ingredients; cook, stirring, until cheese is melted and sauce is smooth.

    Beat egg yolk in a small bowl; add about 1/4 cup of the hot liquid to it, stirring constantly.

    Pour egg yolk mixture into the hot liquid; stir until the sauce is smooth and hot.

    To reduce the risk of curdling, a double boiler can be used after the onions are cooked.

    Making the Hot Brown.

    Heat oven to 400 F, in a shallow backing dish add Texas toast, layer with turkey breast.

    Pour a generous amount of sauce.

    Top with a slice of tomato and 2 strips bacon.

    Repeat for second Hot Brown.

    Place in oven 10-15 minutes or until sauce in starting to brown on edges.
