Hot Chili Rice

  • 4 c. long grain rice
  • 1 (4 oz.) can green chilies, chopped
  • 8 oz. Monterey Jack, shredded
  • 1 1/4 c. sour cream
  • 1 Tbsp. butter

Directions

    Cook rice.

    Mix in chilies, sour cream and 3/4 of the cheese. Add salt and pepper to taste.

    Mix together.

    Pour into a 2 1/2-quart casserole.

    Add remaining cheese on top.

    Pat 1 tablespoon butter on top.

    Bake for 45 minutes at 350° in uncovered dish.
