- 1 tablespoon black peppercorns
- 1 tablespoon coriander seeds
- 1 teaspoon cumin seeds
- 1 teaspoon fennel seeds
- 1 teaspoon ground fenugreek
- 1 tablespoon ground turmeric
- 1 tablespoon ground ginger
Directions

1Combine the chiles, peppercorns, and seeds in a medium skillet over medium heat.

2Cook, shaking the pan occasionally, until lightly browned and fragrant, just a few minutes; for the last minute of cooking, add the powdered spices.

3Cool, then grind to a fine powder in a spice or coffee grinder; add cayenne at this stage if youre using it.

4Store in a tightly covered opaque container for up to several months.
