- 2 (1 lb.) cans beets
- 1 c. brown sugar
- 1/2 c. vinegar
- 1 heaping Tbsp. pickling spice
- 2 Tbsp. cornstarch
Directions

1Drain liquid from beets into a large pot.

2Mix in sugar, vinegar and spices.

3Bring to a boil and simmer 10 minutes. Strain liquid and discard spices.

4Bring liquid to a boil. Dissolve cornstarch in cold water.

5Stir slowly into liquid until slightly thickened.

6Add beets and simmer to flavor.

7Serve hot as a side dish.
