Hot Pineapple Side Dish

- 1 (20 oz.) can pineapple chunks
- 1/2 c. sugar
- 3 Tbsp. flour
- 1/4 c. butter or oleo, melted
- 1 1/2 c. (6 oz.) shredded Cheddar cheese, divided
- 2/3 c. coarsely crushed saltines (14 crackers)
Directions

1Drain pineapple, reserving 1/4 cup of the juice; set aside. In medium bowl, combine sugar and flour.

2Add the butter and 1 cup cheese; mix well.

3Gently stir in pineapple.

4Pour into a greased shallow 1 1/2-quart baking dish.

5Sprinkle crushed crackers on top; drizzle with reserved pineapple juice.

6Bake, uncovered, at 350° for 30 to 35 minutes or until bubbly.

7Remove from oven and sprinkle with remaining cheese.

8This is great with ham.
