  • 6 large potatoes Safeway 2 pkg For $5.00 thru 02/09
  • 440g can corn kernels
  • 1 large carrot, julienne
  • 1/2 red capsicum, julienne
  • 1/4 cabbage, shredded
  • 3 spring onions, sliced
  • 1/4 cup chopped parsley
  • 1/3 cup KRAFT FREE* Coleslaw Dressing
  • 125g tub PHILADELPHIA Light Spreadable Cream Cheese
  • 1 cup salsa

Directions

    Cook the potatoes at 180C for 45-60 minutes or until tender.

    Combine corn, carrot, capsicum, cabbage, spring onions and parsley in a bowl.

    Add dressing and toss to coat.

    Cut potatoes in half and spread with Philly*.

    Top with coleslaw and a dollop of salsa.

    Serve immediately.
