Ingredients

  • 6 slices bacon
  • 1/2 c. chopped green onion
  • 1 c. brown rice
  • 1 (16 oz.) can stewed tomatoes
  • 1 c. hot water
  • 1 tsp. curry powder
  • 1/2 tsp. salt
  • 1/4 tsp. red pepper sauce
  • 1/4 tsp. cayenne pepper
  • 1/2 c. chopped green or red pepper
  • 1/2 c. chopped celery

    Fry bacon and crumble.

    In 2 tablespoons bacon fat, cook onions until soft.

    Stir in rice.

    Mash tomatoes very well.

    Add water, curry powder, salt, red pepper sauce and cayenne.

    Mix well.

    Add to rice along with green pepper and celery.

    Cover and cook on low for 10 minutes. Spoon into 1 1/2-quart casserole. Cover; bake at 350° for 40 minutes.

    Stir occasionally, but quickly to keep moisture from escaping.

    Serve topped with bacon.
