- 6 slices bacon
- 1/2 c. chopped green onion
- 1 c. brown rice
- 1 (16 oz.) can stewed tomatoes
- 1 c. hot water
- 1 tsp. curry powder
- 1/2 tsp. salt
- 1/4 tsp. red pepper sauce
- 1/4 tsp. cayenne pepper
- 1/2 c. chopped green or red pepper
- 1/2 c. chopped celery
Directions

1Fry bacon and crumble.

2In 2 tablespoons bacon fat, cook onions until soft.

3Stir in rice.

4Mash tomatoes very well.

5Add water, curry powder, salt, red pepper sauce and cayenne.

6Mix well.

7Add to rice along with green pepper and celery.

8Cover and cook on low for 10 minutes. Spoon into 1 1/2-quart casserole. Cover; bake at 350° for 40 minutes.

9Stir occasionally, but quickly to keep moisture from escaping.

10Serve topped with bacon.
