- 1 pkg. dry yeast
- 1 egg
- 3/4 c. warm water
- 3 Tbsp. sugar
- 3 Tbsp. shortening
- 3/4 tsp. salt
- 3 1/2 c. flour (add more flour as needed)
- 1 medium potato, boiled and mashed
Directions

1Dissolve yeast in 3/4 cup warm water and set aside.

2Mix egg, potato, sugar, salt and shortening together.

3Add flour gradually to mixture.

4Add dissolved yeast to other ingredients and knead until smooth.

5Put dough in greased bowl and let rise in warm place until doubled in size.

6Work down and repeat rising process. Make rolls and cook in 400° oven for about 15 minutes.
