- 4 large carrots, shredded
- 1 to 2 green peppers, chopped
- 1/4 c. parsley
- 3 Tbsp. salt
- 2 Tbsp. cumin
- 3 Tbsp. sugar
- 2 Tbsp. crushed red pepper
- 3/4 tsp. pepper
- 1/4 tsp. Tabasco
Directions

1Mix all in large crock.

2Bring to a boil slowly.

3Then simmer until as thick as you'd like.

4Set into clean jars (hot).

5Seal in hot bath for 15 minutes, or until pressure cooked 10 minutes at 5 pounds.
